Beetroot
A vegetable grown both for its edible root and leaves. The deep purple root grows into a ball 5cm (2 inches) to 15cm (6 inches) in diameter. The most common varities produce deep red roots, though pink, gold, yellow and striped varieties can also be grown. The leaves can be eaten raw or cooked, with a taste and texture similar to Spinach.
Beetroots are a rich source of potent antioxidants and nutrients, including magnesium, sodium, potassium and vitamin C, and betaine, which is important for cardiovascular health.
